Do what you love. Love what you do..
No doubt you’ve heard of the many variations of this idea that life boils down to discovering doing whatever it is that gives us joy. And, of course we have to pursue that with all we got; everything else will fall in place and we live happily ever after. Right?
Ok, it’s not as simple as that but I do believe there is some truth to that. You also have to believe in what you are doing and put in the effort. If you love what you do then what you’re doing wouldn’t feel “work” like the traditional meaning of work.
I’ve found this to be true in my own life. I love the act of creating something. I find joy in being able to use creativity in the kitchen to make something that will not only taste good but also benefit my health and those around me. I tend to use superfoods in my raw desserts because I know I’m getting the best possible nutrients without sacrificing taste.
This week, my good friend at The Living Foods Lifestyle and I came up with the term “chiaccolota” to describe our favorite foods, chia + chocolate. We like the abbreviated Italian word for chocolate, cioccolato, because the Italian language invokes love and romance, which seems perfect to name the creations based on these two ingredients.
I love chia and cacao and their many health promoting properties; I also love developing chia/chocolate recipes and do this on almost a daily basis. For me this is not work. I love what I do and I do what I love!
Here is a quick and easy recipe to try using raw cacao powder, very ripe frozen bananas, and chia seeds. Using very ripe (bananas with brown spots) is not only great because you will get a ton more of nutrients than not-so-ripe bananas, you will not need any extra “sugar”. I also put PB in this recipe. You can substitute PB with almond butter or any other nut or seed butter you like. I’d recommend a powerful blender to make this ice cream. I use a Vitamix and it has worked well for me over the years. In less than a minute I have instant soft serve, raw, vegan, gluten-free yumminess!
I eat this soft serve for breakfast or any time of the day.
Peanut Butter Swirl Chiaccolato Softserve
About 2 servings
3 frozen ripe bananas (peeled and stored ziplock)
1 heaping TBSP organic PB
1 TSP water (optional)
3 frozen ripe bananas
2 TBSP raw cacao powder (use more if you want it darker)
2 TBSP chia seeds (Navita Naturals)
1 TBSP Manitoba Harvest hemp hearts
½ TSP vanilla extract
1 TSP water (optional)
1) Mix all the PB ingredients in the Vitamix until the consistency is smooth. I didn’t use any water but for those using a regular blender, a little water might be needed to blend well. Stop, scrape the sides, stir, and start again if necessary. Pour into a bowl and set in freezer before proceeding to the next step. I don’t find it necessary but you can rinse out the blender before step 2.
2) Do the same for the chocolate ingredients.
3) This recipe makes 2 servings (approximately, depending on the size of bananas). For the swirl effect, pour the chocolate soft serve over the PB and then use a spoon to make one deep/circle stir. Or, you can do layers of the two soft serve flavors. Top with the following extras, fresh sliced bananas, hemp hearts, cacao nibs, goji berries, and coconut flakes.
